Decadent Chocolate Mousse

So decadent and so rich in flavour, using raw cocoa powder brings a unique quality to this particular chocolate mousse. Adding some spic to this brings a warming feeling to the winter months that are ahead, only a small amount is needed per person and the berries add the tart to the decedent richness to this creamy, dairy free rich and luxurious mouse.

Flesh of 1 young Thai coconut

1 Cup, soaked cashews (soaked overnight in two cups of water rinsed well and drained)

1/2 Cup, raw cocoa powder

1/3 Cup, maple syrup

1/3 Cup, coconut Oil

1/2 Cup, water


1.  Combine all ingredients into a blender, blend until completely smooth and creamy (approx. 1 min).

2.  Pour into five small glasses and top with fresh berries, drizzled with a little maple syrup and a squeeze of lime.
