Leek Sauce

Leek Sauce & steamed veggies

This is a wonderful sauce that can be poured on

anything you like,its rich dairy free and tasty.

Ingredients

1 whole leek sliced into rings

3 cups of water

1 cup cashews

salt and pepper to taste

Method

1. Add the leeks, water and cashews to a pot.

2. Bring to the boil, then reduce the heat to a low simmer, let simmer for 10 minutes, then turn off the heat and let rest.

3. Add to your blender and blend till completely smooth, adding salt and pepper to taste. Enjoy over steamed veggies.
