Raw V8 Chocolate Cake
This cake is genius. The vegetables and hemp seeds alone amp up the plant in your day. The beetroot and the coconut create such sweet flavours that marry up with the cocoa. The icing is rich, thick and decadent, and you would never think that it does not contain dairy. Cut it into squares and pop in the freezer and you have a high-plant-based dessert on tap 24/7.

Ingredients for the Base
2 beetroots, un-peeled and grated
1 carrot, un-peeled and grated
2 cups of shredded coconut
2 tbsp of psyllium husk
15 dried dates
1/2 cup of maple syrup
1 cup of cacao powder
200 grams of soaked sprouted almonds (soaked overnight in
2 cups of water, then rinsed well and drained)
1/4 cup of chia seeds
2 tbsp Hemp seeds
1 vanilla bean
Pinch of salt
Method
Combine all ingredients into a food processor (you might have to do this in batches) and process until well combined. Transfer into a round spring form cake tin, pressing down to get an even layer, set aside in the fridge while you make your icing.
Sweet Chocolate Icing
1 cup of soaked cashews (soaked overnight in two cups of water, then rinsed well and drained)
1/4 cup of chia seeds
2/3 cup of maple syrup
1/2 cup of water
1/2 cup of cacao powder
Pinch of salt
250 grams of cacao butter, melted
Method
In a blender combine the first six ingredients and blend. Once creamy and smooth, turn the blender down to a medium speed and pour in your melted cocoa butter. Blend for 5 seconds, then pour on to your cake. Set aside in the fridge to allow the icing to set and the cake to firm up.
