Lentil Dahl Soup

Ingredients
500gms of sweet potato chopped into bite size pieces
1 large onion diced
3 garlic cloves chopped roughly
1 long red chill chopped roughly
1 tbsp ginger chopped
1 tbls fresh trumic grated
1 tbsp curry powder
3 tbls cumin ground
1 tsp coriander ground
1/4 cup coconut oil
2 tsp salt
1 tsp pepper
2 litres of water
1 bunch fresh coriander chopped roughly
1 bunch fresh parsley chopped roughly
3 tomatoes chopped roughly
1 1/2 cups dahl
Method
1. Add the first 12 ingredients to a large pot and on medium heat and saut. for about 2 minutes, then add the water and cook for 30~35 minutes
2. Once cooked turn off the heat,add the fresh coriander, tomato, and parsley stir well then serve YUM!!
